FIFO food storage means using the older suitable stock before newer stock, after the dates have been checked. Kitchen stock rotation still needs readable labels and a shelf the team can follow, because arrival order alone does not show which item should be used next.

Keep food names and relevant dates visible. Apply your procedure when food is prepared, cooked, opened or moved into defrosting.
Place the suitable item to be used next where staff can find it. Avoid covering essential labels when stacking containers.
An older arrival may have a longer remaining shelf life than a newer one. Arrival order alone cannot establish which food should be used next.
A use-first label can help staff recognise the container your team has selected. The cue does not extend a use-by date.
