Allergen information for restaurants stays useful when the recipe, the supplier packs and the person answering a customer all use the same records. A matrix is an overview of what is recorded, and a blank cell means nothing is recorded there, not that the dish is free of that allergen.

Review every ingredient in a dish, including garnish, dressing and the contents of bought-in products.
A different brand or ingredient can change the allergens in an item. Update the saved records and check the labels and matrix staff will use.
A matrix organises items against allergen categories. An empty cell means nothing is recorded there. It is not an allergen-free assurance.
Ingredients describe what goes into the recipe. Preparation, equipment and storage can introduce separate risks. InstaLabel does not assess cross-contact.
